Whole wheat flax crackers
- mix the following ingredients in a large bowl
- roll out 1/8 an inch thick on well floured surface with well flour rolling pin
- lightly indent dough with a butter knife horizontally and vertically so that you can break apart crackers when done baking
- lightly poke each cracker with a fork to make small air holes in each cracker
- bake on 350 for 15-20 minutes in preheated oven or until light and crisp
- cool and break apart
- 2 1/2 cup whole wheat flour
- 1/2 cup wheat germ
- 1/4 cup ground flax
- 3/4 teaspoon salt
- 1/3 cup olive oil
- 1 cup water
Great with Baba Ghanoush, hummus or with cheese and mustard!
Baba Ghanoush
- Roast 1 whole eggplant cut in half with oil lightly coating the entire eggplant for 40 minutes
- roast 3 garlic cloves 30 minutes tossing every 10 minutes
- blend eggplant, garlic, 1/4 cup tahini (sunflower seed butter), 1/4 cup lemon juice, 1 tablespoon flax meal, 1 tablespoon olive oil and water if need to smooth out salt to taste
- serve with crackers or whole wheat pita's
Pomegranate guacamole - recipe from Trader Joe's prep counter so all of the ingredients are things that you can buy at TJ's, which makes it even easier :) it sounds a little different but trust me....IT IS DELICIOUS!
- 4 ripe avocados
- 1 jar of your favorite salsa 12 oz
- 1/2 onion chopped
- juice of 1 lime
- 1 package of Trader Joe's pomegranate seeds - or about 1 cup of seeds
- salt and pepper to taste
